Calvary is the name of the place just outside Jerusalem where, in the Bible, Jesus was nailed to a cross and died. The Romans used a Latin name that meant skull; the older name for the same spot was , which carries the same skull idea. English speakers usually mean that one holy hill, not any hill. Though actually, most people who say Calvary today are not talking about geography at all: churches, hymns, and street names borrow it as a Christian place-name, so you will see Calvary Chapel far from Jerusalem. It is a proper name and keeps a capital C. It is a church-and-Bible word, not a word for the shops.
