Buckwheat is a small, dark, three-sided seed used as food. Farmers give it to chickens, and people grind it into flour for , , and porridge. The name is a trap: it is not wheat, and it is not even a grass. It is another plant that we cook in wheat-like ways. The seeds look a little like tiny nuts from a beech tree, and that is why the old German name meant “beech-wheat.” In Taiwan you already know it as the grain in 蕎麥麵. Some people choose it because it has no wheat gluten — though actually, the kitchen still has to be careful if real wheat flour is used nearby.

組成Ultimately from Middle Low German bōkwête (“beech-wheat”), probably through Middle Dutch, because the little seeds look like beech nuts and the plant is used like wheat. German Buchweizen is the same name. Despite the name, buckwheat is not related to wheat as a plant.
