Bovine describes anything related to cows or cattle — 'bovine diseases' are diseases that affect cows. It's a mostly scientific or formal word; in everyday speech people just say 'cow' or 'cattle.' It's also sometimes used, a little , to describe a person who seems slow, calm, or not very alert — like comparing them to a cow standing in a field.
