Bisque is a thick, smooth, creamy soup, usually made from . Lobster bisque is the famous one, but crab or shrimp can be used too. Cooks typically turn the shells and meat into a rich soup, often with cream, and it is often a little pink. It is a restaurant and word, borrowed from French; you would not use it for a clear soup or a chunky stew. On a menu it feels a bit fancy.
