Birthing is the process of a baby coming out of the mother's body. As a noun it sounds a little more like hospital or midwife talk than the everyday phrase giving birth. You will often see it stuck in front of another word: a birthing room, a birthing pool, a birthing centre — places and things set up for that process. Some people also use it as a verb (she is birthing the baby), but many speakers still prefer giving birth. It is not rude; it is just a bit specialised, and more at home in modern care-talk than in old storybooks.
