If something is bankable, people believe it will make a lot of money — enough that a business will take the risk. It is not mainly about walking into a bank. It is about trust that the thing will pay. You hear it a lot around films and famous people: a bankable star is an actor whose name is enough to sell tickets; a bankable idea is one people with money will fund. It feels like grown-up business talk, a little sharp, not a word children use at home. Though actually there is an older, more literal use too: a bankable is one a bank will accept and turn into money. The “sure to make a profit” sense is the one you meet most now.
