Aviation is the whole activity of flying aircraft — designing planes, building them, flying them, and running airports and airlines. If someone works 'in aviation', they work somewhere in that flying industry, not necessarily as a pilot. You'll see it in phrases like 'the aviation industry' or 'aviation history'.
