A tall plant with a sweet, slightly sharp smell, used in cooking. Cooks candy the hollow stems and use the bright green strips to cakes; the stems and seeds also flavour jam, sweets, and some drinks. It is a Western kitchen plant, rather old-fashioned now, more at home in a Christmas cake than in everyday cooking. Though actually, the herb families know as 當歸 is not this plant — it is a different member of a wide plant family, used as Chinese medicine. If a recipe in English says angelica, it wants the European cooking plant, not a packet of 當歸 from the Chinese pharmacy.
組成From Latin angelica, 'angelic' — the same word as the woman's name Angelica, the heroine in Ariosto's poem Orlando Furioso (1516). Church Italian used Angelica this way; the plant was named as if it were an angel's herb.
