Allspice is a small dried berry from a tropical American tree. Cooks crush it, or grind it, and put it into food. It is not a jar of many mixed together. It is one fruit. People named it allspice because the taste seemed to carry several familiar spice notes at once — a little cinnamon, a little clove, a little nutmeg. You meet it in cakes, stews, pickles, and in Caribbean cooking such as jerk . It is an ordinary kitchen word. English speakers do not use it to mean “every spice,” and they do not use it for Chinese five-spice powder, even though the name can trick a into thinking that. In older English you may also see it called Jamaica pepper; that is the same berry, not a different plant.
