An accelerant is a substance — often petrol or another liquid that burns easily — that makes a fire catch and spread more strongly. Fire investigators look for accelerants when they need to know whether a fire was helped along. The word lives in news, police work, and science, not in the kitchen. Strictly it can mean anything that speeds a process, but in ordinary English you will almost always meet it with fire.
組成accelerate + -ant (a thing that does the action, or tends to). So: something that makes speeding-up happen — here, a fire speeding up.
